So because you are all my friends, I need this open forum. This should probably have been a private email to JustJenn who, btw, is the nicest person in the world. She recently sent me A LOT of groceries. We talked a bit of what I needed. First of all,  It seems you can send me beer and wine. I just have to show my ID to the super cute delivery guy who could be my grandchild. And he did some kind of thing with a barcode on the back of my ID.  That was sort of freaky. I mean what is in there?

But I had wine for the first time in months. And may or may not have bought a very expensive thing and annoyed the  holy fuck out out my gay husband.  Not to be confused with my gay boyfriend Marc with a  C. Sorry, I am not sure he knew about being marriedish.

So there was some …or a lot of extra stuff. Jenn sent me a dozen eggs. I get this is sort of a staple, But what do I do with a dozen eggs? Can I tell you a little story about my best friend Leslie? Leslie was 11 and I was six. My mother hated her. For one she was CANADIAN.  I never really got what was wrong with CANADIANS other than the fact the were not southern Baptists. At any rate she didn’t like Leslie or her whole entire family. I get it, where the fuck are you going with this story Well Leslie taught me a lot of things like “if we don’t start using our toes we won’t have toes anymore (something about evolution).And then she told me that eggs where EMBRYOS and went into eleven year old details. SEE? I GOT THERE! So  that is why I don’t eat eggs.

HOWEVER if I had a pie crust.  Hmm I do  have a tiny can of biscuits… So what do i do with all of these embryos?

Also there are little bitty bottles of some hippy dippy shit. Something about digestion I think?  It looks very expensive. And where the fuck is this shit in my hillbilly Publix? Anyway, it took me a bit to get it all put away. To be honest I still have the canned stuff to put away. I don’t have much energy these days and I sleep more than I am awake.

But Just Jenn is very, very, very kind.

So  what should do with all these eggs?

    Scrambled with a bit of cream cheese top with chives. Southern breakfast, scrambled eggs, ham or sausage and grits. Hope you feel better soon.

      I hate her too. She’s the private jet flight attendant/sex therapist.

      I don’t really like eggs either but buy them if I’m making meatloaf, meatballs or breading chicken/pork chops. Otherwise I’ll boil them and make egg salad because egg salad and deviled eggs are the only way I eat an actual egg.

        Boil eggs to chop. Melt butter in a pan, add some flour & salt , get that mixed together. Then, add milk. It’s like you are making gravy w/butter, salt, flour & milk. After it begins to thicken, add the chopped eggs. You have to watch not to let it stick. If it’s too thick, add more milk. I have never used exact measurements. I watched my mother make it. You can adjust amounts depending on how much egg you prefer, how many you are feeding. Serve it over toast.

          I have never heard of this! Do you mind if I ask what part of country you are from, where this is popular? I am intrigued. Seems like a really crunchy sour dough or english muffin and maybe a little city ham would be good with this. Hmmm.

          Honestly, I was afraid you were talking about really soft scrambled eggs and that makes me a little..oogy. I cook breakfast eggs to death, never got past it from childhood!

    Two words….Dutch Baby and I have to add to that Pancake. Dutch Baby Pancake for brunch. 2 eggs, 1/2 cup milk, 1/2 cup,flour, 1/2 tsp salt, 2 Tbs sugar , I tsp vanilla. Put it all in the blender mix it up . Put a 10 inch cast iron pan in a cold oven. Turn it up to 425. Let it stay there for 25 minutes. Let the batter sit while this is happening. Now 25 minutes lte take out the verrrrrry hot pan , melt 2 Tbs of butte4 in the pan, swirl it around so it’s coated , then pour the batter into the hot pan. Swirl it around, then back in the oven for about 20 minutes . It will puff up and brown, sprinkle w/ powdered sugar , serve with fruit! And if you dare some ricotta.

    I regret to inform you that most chicken eggs are not embryos. Occasionally, a fertilized egg gets through & those can be discerned by a visible white dot in the middle of the yolk. I’m not a know it all… I just googled it. So if life begins at fertilization idk what you do if you come across a fertilized chicken egg or heaven forbid a sea turtle one? Freezer? Otherwise, breakfast tacos are delicious on soft flour tortillas and hit most food groups in one to dependent on preference of fillings.

    Sorry, delirious and thinking about weird shit. Officially lost my fucking mind, we already knew that but it is worse now lol.
    Because, day 21 1/2 of sleep deprivation from the never ending headache from hell. I’m waiting to see a neurologist as I finally got a referral. I can only type with one eye as now I have double vision but y’all are my peeps and I missed y’all.

    Oh and can we talk 1/6 hearings bc I just finished watching/listening to the recording from tonight/ last night. wtfever. The best was the raw footage of the we love you go home address. What a fucktard Fatass orange toddler.. sadly doubt it reached the cult members and he’d be better off joining Scientology and taking his idiot members with him. Or starting doomsday cult even better a la Jim Jones.

    It’s not as if we didn’t know they were thieving cult members, but I found out today that my c card was duplicated somewhere and it was charged as “charitable donations “ WTAF, I AM THE CHARITY CASE. Upon filing fraud charges, turns out thousands $ were charged to TRUMP AND PRO LIFE DONATIONS. Just NOOOEEE. Accounts now frozen as I await new cards. I’m sofa king Pissed. Liars thieves and fuckery. The irony is not lost however. Trying to find the funny in it.

    Glad you are feeling somewhat better and bless Jenn for sending you stuff. Thank goodness for delivery groceries as covid is everywhere and no one wears masks anymore.

    Ps, my leg hair got worse after menopause as did my late grandmother’s as she used to have me shave them for her in her 90s and it was like a Brillo pad so I got that going for me. Much rather lose it all as it is a pita.

    First, eggs do last awhile so don’t feel as though you have to use them immediately like most fresh vegetables.
    Second, I always have a few dozen in my fridge, they are my favorite food. So I love frittattas, they are really easy and a cross between an omelet and quiche. Use any vegs you want, any cheese, remember to season, and you are golden. As long as you cover tightly and refrigerate the leftovers will be good for a couple of days.

    Buttermilk pie. No crust necessary. Paula Deen’s recipe I’ve used for years. I have bis quick in the fridge b/c i use it for some xmas recipes. Never for biscuits. Put some berries on this. You’ll love it. Keeps well in fridge.

    Ingredients

    1/3 cup melted butter
    1/2 cup biscuit mix
    1 cup buttermilk
    1 1/2 cups sugar
    1 teaspoon pure vanilla extract
    3 eggs

    Directions

    Preheat oven to 350 °F. Grease a 9-inch pie pan. Put all ingredients in a bowl and blend for 1 minute with a handheld electric mixer. Pour mixture into prepared pan. Bake for about 50 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes.

      Oh yeah, you don’t really have to break out hand mixer. Whisk it well and you’re good.

      I make frittatas quite often. Good any time of day. Bread and a class of wine at night. Cup of joe in morning. Doesn’t matter.

      Make a handful of pasta. Saute whatever veggies you like or are starting to look sad, I have to put onions in everything. Add cooked pasta to skillet. Whip up 3, 4, 5, eggs with a little milk or cream or water. Pour over everything. Let it sit on stove top for a couple minutes. Sprinkle with whatever cheese you have. I often drape it in jarred red peppers and goat cheese if I have it. Stick under broiler until puffy and brown. Supper’s ready! Keeps for a few days.

        I put onions in everything too! I’m not sure what JustJenn said to the guy who shopped for me but each onion was in a bag and tied up. Same wot44 with the mangoes. I mean why do they all need individual bags? Back in the day when I left the house, LOL, I would just grab a bag of onions and a mango or two. Who needs a bag for either? It was basically a really hot version of lawn kid who was my shopper. This whole instacart thing is something I could MAYBE get used to.

          I buy frozen mango chunks for my smoothies. I suck at picking fresh ones. Tell me you didn’t hang your onions in panty hose? We all did! Do they still make panty hose? I dig them wrapping them, it’s got to help keep them somewhat fresh.

          I could go on and on with the recipes. I’ve given up on restaurants (except Chick fil a, shut up), tired of spending all that money for something that makes me go meh. Don’t tempt me!

        Hummingbird cake is my absolute favorite! My sister is an AMAZING cook and makes the best hummingbird cake! Sadly, I will probably never have it again. My sister’s house has a million steps to get up. It’s a problem for my sister too these days. 🙁 Plus, her house is way far out of my ever shrinking cone of safety.

    Scramble up two eggs and top with some cheese and salsa, put them in a tortilla, and you have a nice, filling meal. Hard boil the remaining 10, cut them in half, and make deviled eggs. Pound down all 20 of those bad boys and still feel hungry.

      Yes to all of those. I like to make fudge brownies with the really good baking chocolate I bought. I think they take four eggs (plus a ton of butter and about one cup of flour 🙂 )

    1. Fried egg sandwiches on toasted bread with bacon and any cheese
    2. Egg salad sammiches
    3. Breakfast tacos – scrambled eggs, peppers, onions, potatoes, sausage, bacon, ham and cheese in a tortilla
    4. Migas – scrambled eggs with peppers & onions, sausage and crumbled tortilla chips
    5. Hard boiled eggs – slice and put on toast with melted cheese on top
    6. Crustless quiches – mix eggs with milk and veggies and meat of your choice – pour in greased muffin tins
    7. Breakfast cassaroles – throw in hash browns, eggs, meats, cheeses and bake till golden brown and bubbly
    8. Throw hard boiled eggs in tuna salad with celery, pickles, etc.

    I could go on and on and on

      Ok now I’m having a change of heart about using the eggs just for desserts. I love quiche, breakfast casserole, omelets even scrambled eggs (but with cheese). Yum!

    It’s just I’ve never had a dozen eggs before. I don’t think I’ve ever bought eggs before. Am I doing life wrong?

      Yes! I’m not a big egg fan. Have to be in the mood for them and sometimes it just hits me wrong. But cooking them IN stuff is cool.

      If you have salmon, cook it, flake it. About 6oz or so. Add lemon juice, 2 eggs, sliced green onion, seaon, add a little bread crumbs to bind. Patty it up. Dredge in panko, rest in fridge for a few minutes to a few hours. Fry in shallow oil until golden brown. Delicioso. You can use a can or two of albacore tuna in this. Don’t knock it. It’s really good and crunchy. I like it with mashed potatoes and sauteed carrots, maybe a little remoulade or tartar sauce. But it’s good with anything, even on a sandwich.

    OMG I love eggs. I tend to panic when I run out of eggs and alkaline water. I’m almost a recluse so that’s my queue to brake the grocery store.

    Random side note – my psychiatrist says that my anxiety about leaving the house is a matter of motivation. If I can manage to leave to go to work and to buy water, I can leave for other things. I can tell you now, the extreme Houston heat and the assholes roaming the earth are not good motivators at all. lol

    Anyway back to eggs – I like my booze – a good whisky sour or tequila sour. I use an egg white to make it nice and frothy at the top. yum.

    Oh come on TT, deviled eggs are the Southern Baptist staple. I bet you have one of those fancy plates for them. Maybe even the one with the carrying cover for the potluck. And they’re pretty good for you, if you don’t put too much crap in the filling. You can make them as spicy or whatever as you want. I’ve used greek yogurt instead of mayo. Or hot sauce, or whatever I have lying around. I LOVE deviled eggs!

      Deviled eggs are for funerals. I eat one (half) deviled egg whenever a family member dies. I don’t really care for them. It’s just sort of a ritual. What? I’ve never claimed to be a normal person.

I’m loling because this thread seems to have turned into the forest gump of eggs instead of shrimp… shrimp scampi, boiled shrimp, shrimp gumbo, fried shrimp etc courtesy of Captain Dan. Y’all crack me up. But I like eggs sometimes and appreciate the recipes and ideas. Hugs to all especially the egg hater. 🙂

    My word, has nobody suggested dippy eggs? Either sunny side up or lightly over, paired with a wonderfully buttered piece or 2 of toast is so delicious! A little bacon and grits with plenty of salt and butter, you’ve got yourself a delish breakfast and a mid morning coma/ nap that was well worth every minute of the food!

    Hello TT and the gang. I’ve come out of hiding. I had and still do have a lot on my plate as far as my physical and mental wellbeing. I can say that I honestly missed you all. There is so much to catch up on, that I don’t know where to start. I love eggs cooked: scrambled with some cheese, hard boiled, quiche, hard fried (I don’t like a runny yolk)

    Ok I have a confession to make after all the comments with wonderful ideas! I was diagnosed with slightly high cholesterol a few months ago. Eggs are out for me! Too high in cholesterol. I have used the egg white liquid stuff that comes in cartons so I can make scrambled eggs. Not the same but I add seasoning and veggies with olive oil to sort of replicate real scrambled eggs. Y’all it’s just not the same 😞 I’ll just enjoy the suggestions!

    I do like quiche but I don’t have like a crust for it, or much other stuff to put in it.

    I also need to cook a pork loin. Never done that before either but it looks delicious. I may cut it in half and freeze half. I’m thinking of slow cooking it in the oven with a garlic rub? I also have BREAD! I never have bread. So maybe a BBQ Pork sandwich? I think I might be out of the good pickles. I ate the last of them the other day. Mount Olive ? Something like that bread and butter chips are DELICIOUS. I bought some at Whole Food (their brand) and they were expensive and awful.

      Turns out the pork loin is already marinated in BBQ. I cut it in half and put some more stuff in there to get marinated. Also I am REALLY REALLY DIZZY. WTF is wrong with me now?

      If you don’t have anything to watch, use Paramount + to watch the new season of Drag Race All Stars. It makes me so happy every week to watch. It is all previous winners so every one is so smart, so funny, and the runway looks are phenomenal.
