Open Forum: What’s Cooking In The 2021 Quarantine Kitchen?

Well, we made it to 2021. But we have a long, long way to go still. So I figure we need to stay home and cook and watch a shit ton of TV. So today, I decided to cook my package of chicken thighs. As usual when I cook, I changed courses a few times in the middle. At first I was just going to brown the chicken and then bake it. Maybe with some cream of something soup on top. Then, I changed course to Captain’s Country Chicken, a low country dish my mama made a lot. And then it somehow turned in to an Indian curry. Fun fact, I’ve never made an Indian curry, and I don’t think I have eaten one either. And yet, that is what is simmering on the stove. And it actually smells pretty good. And I had a can of coconut milk that needed using. It’s actually been simmering for a couple hours.

As for TV I’ve been binging The Good Lord Bird on Showtime. I’m watching the finale now. I have enjoyed it but it took me a bit to start getting into. I’d ask y’all what to watch next but it seems you guys only watch Netflix and Hulu and such and I’m old school cable TV. It was a decent series, but I think I was a bit disinterested at first because it doesn’t seem that long ago that I watch Harriet in a theater and it was fantastic. If that is the last movie I get to see in a movie theater, it was a worthy one.

Here in Georgia we are still enduring the longest election season on the planet with no stop commercials, phone calls, junk mail and general hysteria. The election is Tuesday so we should know the results but June. Maybe. And on Wednesday, the Trump Cult is headed to DC. I’ve been hoping for an ice storm or a rain out but it looks, as of now that the weather will be fine. So we are in for another “interesting” week. Especially, since the morons in the senate have decided to die on Trump hill this week when the electoral college makes Biden’s win official.

Then, we still have a whole, bunch of morons having super spreaders parties.  Floating hospitals are headed to California. The vaccine distribution is a clusterfuck. And all the morons that just had to fly for Christmas are going to cause another huge wave.

So let’s all hunker down at home, and fine new show to watch and discuss. There are lots of channels out there. Bravo is only one and it’s a sinking ship. I have more packs of chicken thighs. Let me know what you would do with them. I’ve got a couple days of eating curry. And then I might make pineapple pork chops. 🙂

    I threw together some papardelle with a lemon-garlic-mushroom sauce earlier. Perhaps I’ll do it again later.

    I officially get back to work tomorrow, but I got a head start earlier with my usual deep dive into the usual awful news.

    Congrats, TT, we made it to 2021. I just hope better days truly lie ahead.

HE IS GOING TO JAIL or else Pence will be our 46th president for five minutes.

        Of course, he’s still going there. Of course, he’s still pursuing his coup. And of course, it will still be up to our members of Congress to shut his shit down this week.

        And then, it will be up to Biden later this month to let the Justice Department investigate and prosecute all of this dirty shit. We can’t afford to sweep this under the rug any longer.

        I saw what he and his minion did in my state last November, and I’m so sorry that you and other Georgians still have to live through this shit now.

          I still say Trump will abscond with the lion’s share of the money he scammed from his lemmings to fund the cost of “rectifying the fake election.” He’ll “suddenly decide” to build the world’s most luxurious resort — in a country with no extradition treaty with the US.

          But not until he gins up his Proud Bums.

          Or maybe he’ll build a giant alpine resort in Siberia. And freeze to death.

    Had such high hopes for the new year, but it’s no starting off in a good place. Our democracy continues to hang by a thread. We have a Congress full of elected officials engaging in sedition, and a mob boss in the White House. Our hospitals are full!         Okay, when growing up in Libya, I was taught to walk with purpose. Never look lost. Pretend like you know exactly where you are going even if you don’t. Look like you are supposed to be there. This was important especially in the souk which was very crowded and the men liked to cat call not me, but my mother and sister(when she visited). Anyway. I still use this skill when traveling and crowded places.

        That takes me to the late seventies? early 80s and my first concert. It was Toys 4 Tots and there were a lot of big names there but all I cared about was Andy Gibb. My mother who never let me go anywhere only allowed me to go with my friend because her parents were going with us to chaperone.

        So, we go to the concert and for whatever reason, I take off by myself. And I walked straight backstage like they were expecting me. And once I did it once, I was able to go back and forth. They never questioned me. They turned plenty of people away, but not me. Back stage I met a female photographer who told me where Andy Gibb’s dressing room was and she walked me in. At first I didn’t see him, he was taking a shower or getting dressed or something. Eventually he came in the room and it was all kind of normal. There were other people in the room and we were all just talking. Then the female photographer invited me to the after party so that I could talk to Andy.

        DILEMMA! How was I going to explain this to the parents and friend I had abandoned? Obviously, I wasn’t allow to go. And the parents never really liked me after that. lol But I saw Andy Gibb up close and personal in his dressing room and was invited to the after party.

    Instant pot chicken taco bowls is an amazing recipe that we love. Chilled shrimp cocktail is a staple. Marzetti’s fruit dip is always on hand for cut up apples and pears- yum! Any type of Asian recipe with Salmon is tasty. We too love chicken thighs and cook them all the time in all kinds of ways, in he oven, on the range, on the outdoor grill…mccormicks makes some great tasty seasonings- mojito lime is our fav. Tried Hello Fresh for 4 meals, wasn’t impressed so I cancelled the subscription.
    Lastly, why is one on my year end movies always Burlesque? Can’t explain why but it pulls me in every time. Ok- I can explain. Cher. Period. Mic drop.

      I love Instant Pot butter chicken. I have a cookbook of Indian recipes for the Instant Pot. I love making brown rice with broth and spices. It’s so good and difficult for even me to mess up.

      I’ve been tempted by Hello Fresh a few times. Nope, I have pork chops that are going to be fried in cast iron.

      My college age son lives a couple of hours away, so we met for shrimp and grits on a restaurant patio. Temp in 60s and I listened to Chris Cornell’s No One Sings Like You Anymore on the ride home. What a voice, what a loss. Anyway, tonight I’ll have some left over New Years cabbage and black eyed peas while I watch an episode of Bridgerton. Cameron, bless her heart… Happy New Year, everybody!

      Zoe’s Extraordinary Playlist is on “regular” TV and Season 2 starts Tuesday.

      The Hap & Leonard series is on regular TV too. Excellent. If you don’t have Netflix, it airs periodically on regular TV. James Purfoy (Hap) and Micheal Kenneth Williams (Leonard).

      I totally get it. And quite frankly, I think all this reality TV shit helps us understand what the hell is going on at the White House. After all, he’s a reality TV guy himself. He’s pulling some really awful Nene/Teresa/Erika-level bullshit, and he gets to play with nuclear weapons (hopefully, only for another 16 days).

    Tonight I made “meat” loaf and mashed potatoes and plan on watching the first three episodes of Shameless.

    Also damn Cameron for mentioning that movie. I googled it because I love animal movies and now I’m crying. Will not be watching.

      Oh no, sad animal movie- just can’t. As soon as those humane society commercials start with the dogs in cages and the sad music, etc., I have to turn the channel (even though I know I should listen). Thanks for the heads up, JustJenn ?. Regarding the Crazy Orange, something’s been on my mind – I need to research this a bit, but does anybody know whether a POTUS can actually access the nuclear “button” so to speak, without a check/balance? Or is that just a myth that we’ve always heard? Cuz with this one unraveling and losing his damn mind, it’s actually a concern I’ve entertained – ughh. Made a tarragon turkey pot pie today with the leftover (frozen) Thanksgiving turkey.

    OMG. I’d kill to watch the rest. Sigh.

    thanks to the non-stop education that is tamara tattles, i bought a bottle of veuve cliquot for new year’s and i just wasn’t thrilled. so i went champagne shopping and bought an assortment of champagnes to trial. tonight i am enjoying a lovely lucien albrecht cremant d’alsace brut rose. cremant is champagne method but not made in the province of champagne. rose means made with pinot noir grapes same as the veuve but $30 cheaper, pink, and way tastier to me. i’m also guessing i’ll be spending much of january 2021 with a bit of a glow on.

    My son was home for the holidays and my younger son lives with me and my daughter. The boys ate fast food for every meal. Except Christmas when I had a tenderloin roast. I am not a fast food fan. Today I made a meatloaf.

    I’ve watched most of the shows mentioned. I am always looking for a new show to watch. I am watching 90 Day Fiance. Won’t watch RHA. Am waiting for I Love a Mamma’s Boy to return. I also watch a lot of foreign language series.

    I’ve signed up for Home Chef. Because in the last 10 months we have spent a fortune on delivery supporting local restaurants, or I cook Italian food from scratch so we need some balance meals.

    That Discovery+ subscription is tempting. I hate streaming when I have to hook my iPad to my tv to do it though. And is there really anything 90 Day related that will air on there and not be leaked?

    Tamara, if you like bone in, skin on chicken thighs, an easy and good dish is to simply put them in a baking dish with garlic cloves in between them and cover with soy sauce. Bake for for about an hour at 375 covered. Uncover, baste and put back in for about a half hour (my oven temperature fluctuates ?) until the skin is s crispy and the garlic is confit. We serve it with rice.

    1 can coconut milk
    1/2 cup sweet chili sauce
    Juice of 4-5 limes
    Salt and pepper
    Boneless skinless chicken thighs
    Mix everything together and marinate chicken.
    Cook in skillet on medium high 6-7 minutes on each side.
    Serve with white rice.

      Sounds delicious. I don’t have the first three ingredients at the moment. But I’ll pick it up next time I dare to go INTO THE WORLD again.

        It’s an Asian type sauce. My grocery store has an aisle where ethnic foods are mainly located together, and I found it there. It just says sweet chili sauce, and the brand is Mae Ploy.

      I did! It was sad to hear that Meghan has such a rough delivery and aftermath. But it was great to hear how much she loves motherhood. She never was one who really wanted to have a baby. I was surprised she changed her mind. 🙂

    TT, I hope you’ll cover The Bachelor if you have time. Your coverage of the last Bachelorette is why I started watching this franchise again after over a decade of not.

    Matt is so sweet and handsome and watching all these people smile is making me smile and I think that’s worth something because who doesn’t need that.

    So maybe more people will tune in to a mostly lighthearted show for fun if they’re over the Housewives.

      I might recap The Bachelor here and there. I AM IN LOOOOOOOOOOOOOOVE with Matt and was charmed further when he prayed with all the ladies first. The idiot villain has already been identified. She plays her part well and has insured herself several episodes. I thought the lady in the barely there black dress was going to get the first impression rose. She is one to watch, his eyes nearly popped out of his head. And the one that showed up in bras and panties too. If he doesn’t end up with a black girl… there may be a lot of backlash.

    I cooked hotdogs and brought a bag of chips and Doritos. I love the 7 Little Johnston’s and My Big Fat Fabulous Life. I didn’t realize that the reason Trump supporters are going to Washington was because the election should be certified tomorrow. I’m praying all is well and the Georgia election pulls through and elect both Democratic candidates. I so want McConnell to lose his power of not bring bills to the floor and just letting them sit. He is not doing his job in my opinion. At least let them vote on it whether it win or lose.
