Open Forum: Another Lazy Sunday

I meant to get this up earlier but my days and nights are backwards and I just woke up. It’s another hot week here and I’m just sleeping through the hot parts of the day. This is killing my garden because I kind of got out of the habit of watering since it usually rains every single night. I’ve not really been in the mood for tomatoes lately so they are starting to just go bad. I should at least make some sauce to freeze. But I’m so lazy these days.

While Sundays are great for sleeping in, it is also a “return to the work week” for me. Tonight is two hours of 90 Day Fiance (Happily Ever After?), Potomac, and Big Brother (YES!) to recap. Plus I need to record The Chi and other things I like to watch when I have time. I am a bit behind on The Chi because I like to give that show my full attention and I’ve been rather short on attention lately.

This week marks a full FIVE MONTHS of quarantining. I can count on two hands the number of times I’ve left the house for any reason. So tell me about your gardens, What else is going on with you? What have you been eating? I’m not eating enough. I really need to do a FULL SHOP at the grocery store. Perhaps tomorrow… what should I buy to entice myself to eat during this hot weather?

    I only go outside to walk, and those walks occasionally involve a stop at my bank’s ATM, which is fortunately outside. I now do all my shopping online.

    In other news, I have a TV that I actually turn on. It’s a new smart TV, so it’s really easy to watch Netflix, Amazon Prime Video, and YouTube.

    Also, my cherry tomatoes are starting to turn red. I need to figure out what the hell to do with them once I have enough red tomatoes to cook with.

      My cherry tomatoes are almost done and I still haven’t figured that out. I had a craving for chicken and rice the other day. But you probably don’t stock a pantry the way I do. I always have lots of chicken and/beef stock in the paper containers. And usually have lots of canned meat in case of a pandemic (or when I was actually stocking up prior to the pandemic, it was for the Zombie Apocalypse that at this rate is likely to arrive soon.) So I made sort of a homemade spicy chicken and rice soup and put a ton of halved cherry tomatoes and lots of diced jalepenos, and beans.I had some tortilla chips and sour cream and that was pretty good.

      I’ve also eaten a lot of pasta with a clam sauce. I stick the cherry tomatoes in that sauce too. Sometimes I have clam sauce in a bottle but that is gone, but I recently got more cans of clams. So there is that as an option. All of my options sort of require a very quick prep of basically throwing stuff in a cast iron skillet and forgetting about it for a while. 🙂 Anyway, my pantry is low, and I’ve been out of wine for weeks. So an in person shop is in order. NOT LOOKING FORWARD TO IT. I think I am going to buy things like heavy cream from my clam sauce and freeze it in cubes to have on hand.

      My fucking Freezer that I just bought is a hunk of crap where the shelves don’t stay up. NEVER BUY A FRIDGEDAIRE.

      Sorry, I really this post was not particularly helpful about the abundance of cherry tomatoes. I’m hoping to find some pie pastry in the frozen sexcion and maybe make a tomato tart.

        I started stocking up in March, and I’ve since gotten in the habit of of having extra “just in case”. I started to freak out over coffee while shopping for this week, until I reminded myself that I already have several boxes of k-cups in the pantry!

        I might finally have to give “tomato pie” a try… Or perhaps I’ll use tuatha’s recipe as a springboard for a new pasta recipe. (Thanks, Tuatha!)

        I just switched to Firstleaf for my monthly wine deliveries, and they really hit it out of the park with my intro box! I’ve tried and enjoyed the Bordeaux Blanc and Macabeo so far, and I’m excited to try the rest of the wines from this month’s box. It’s not as if Bright Cellars was bad, it’s just more that I’m really impressed with the selection Firstleaf offers. And with both, it cuts down on the need to go out to shop for wine and/or pay extra for a delivery service to pick some up for me. (FYI: I have no paid partnership with either Firstleaf or Bright Cellars.)

        Do grocery stores and liquor stores in your area offer instacart delivery? I’ve used that for most of the quarantine and make sure my pre-paid bill includes a good tip for the delivery person. It really helped me.

          Hey at least you guys live in a state where you can have wine or liquor delivered! In the great state of Alabama I can’t order alcohol of any kind from anywhere and have it delivered to my home??

          I’ve used Amazon fresh for groceries and BevMo delivers alcohol. I go to the office once a week but haven’t gone to grocery store in 2 months. My awesome brother braves Costco for me.

      1 large onion
      75 grams butter
      1 teaspoon sugar
      1 pinch of salt (to taste)
      Cherry Tomatoes

      Add 1 tablespoon of cooked pasta water to the sauce before you drain the pasta.

      Melt the butter, let the chopped onion simmer in the butter and soften for a while before adding the tomatoes and the sugar and some salt
      Cover, and leave to simmer GENTLY for 2 hours
      Check it every now and then – a saucepan is best for this.
      Serve with pasta (I use whatever I happen to have at home)

      You can add seafood,fresh basil, grated cheese.

          Oldie but a goodie…English muffin toasted, crisp bacon layered with a tomato slice then a slice of cheese. Pop under the broiler until melty. Open faced sandwich/snack!

              I might slide a thinly, thinly sliced onion under the cheese. Another combo I would like to try is bacon, artichoke heart and feta. I am making myself hungry!

            This is one of my favorite ways to use up fresh tomatoes! I’ve used up all kinds of breads for this as well. Leftover hot dog or hamburger buns, ends of bread loaves, etc. Of course I’ve also used fancy bread but I love being able to use up leftovers. Sooo delish!

        Making some version of this now. I roasted the tomatoes first. And you know added a bunch of stuff.Fresh oragano (everyone should grow oregano it never dies and comes back every year, Basil (that I am killing because too lazy to water) garlic, a bit of chicken stock to keep it liquid, and I’m now roasting a whole bell pepper from the garden to add eventually. It is simmering on the stove. I plan to put it in the blender and return it to the skillet in a bit. It better be good, I used the last of the cherry tomatoes for this!

      This is the easiest recipe in … EVER. Usually, I make it with plum tomatoes because that is how Mex made them. (Mex = Amerigo, an Italian former boyfriend’s dad. We stayed friends until Mex died and the ex and I still are great friends, good karma recipe.)

      Mex Tomatoes
      Preheat oven to 325F

      Half lengthwise enough plum or cherry tomatoes to cover a cookie sheet or two.

      Lightly brush baking/cookie sheet with olive oil (or use a Silpat).

      Lay the tomatoes cut side up on the baking sheet.

      Drizzle with olive oil. Sprinkle with fresh basil (chiffonade/shredded), salt to taste, fresh ground pepper (or white pepper for milder flavor) and shredded Parmesan or Asiago (or mix) cheese. Do NOT use the crappy Kraft shit. Leave cheese off rather than use Kraft shit, or put it on AFTER baking.

      Bake for 45 minutes – 90 minutes (depends on moisture content of tomatoes).
      Tomatoes are done when they look like dried red puddles of their former selves, but not burnt.

      If you bring these to a party, people will give you the “Oh, poor Nanette… Look she tried to cook something …we will taste it, then spit it out when she isn’t looking.” Then they taste and it’s like “tomato popcorn.” Coming back for more and more.

      If I had ripe cherry tomatoes I would throw them on a sheet pan, drizzle with evoo, salt and fresh ground pepper and roast at 400 degrees for about 20 min. Then let cool, pop the skins off and put in freezer bag for soup or spaghetti sauce or salsa. Yum. Or eat raw with a lil’ bit kosher salt with English Cukes. ??

    Hi Friends.
    My days and nights are all messed up as well. I think I may have restless leg, foot, brain syndrome. I’ve decided to eat dip until the end. Artichoke or hot crab, spinach, basically anything with cream cheese…..toss in a 7 layer or even a basic onion dip. I balance this reckless behavior with gluten free crackers.
    Still only like 6 blackberries and zero figs. I’m having a love hate thing with tomatoes. Hate is winning. Lol

      Ha! Love the balanced approach! For me, I have stopped eating ice cream out of the giant mug. Means more trips to the freezer but those steps are counted on my Fitbit so yep.

    I have no garden. I do, however, have a gopher who lives under a little shed that we used to keep our kids’ bikes in. (Hence, no garden. we did try a tomato plant a couple seasons ago but every one of the fruits had teeth marks in them.) so I deal with the indifferent produce at my local Stop and Shop. If you get decent cherry tomatoes you can make a pretty tasty salad. I have been trying hard not to get crushed by despair. I take walks. I write. I pet my dog and enjoy the feel of her warm head under my hand. I miss my kids, but we’re trying to stay safe. I try not to cry. I comment on news articles in the hopes that someone thanks the way I do. I have also been reading a shit ton of romance. It helps.

    Our garden is so slow this year. Our tomato plants have tons of huge tomatoes, but they are all still green. I need to find a recipe for green tomato sandwiches. We do have lots of beans and cucumber though 🙂
    When the hot weather hits I like to make a big quinoa salad and keep it in the fridge to munch on. I know it sounds healthy but it actually is delicious and you can throw pretty much anything in it. I like to to add cherry tomatoes, chickpeas, feta, olives and fresh herbs to the quinoa. Then throw on a balsamic dressing and you are set for a few meals.

    try cherry tomatoes cut in half; diced, cooked bacon; balsamic vinegar (the good stuff, not kraft).

    dinner tonight was pretty good out of the garden – cole slaw with sweet pepper, radish, onion, a shishito pepper that turned red. yellow wax beans simmered with new potatoes and a smoked pork chop. fried in butter green shishito peppers and red okra. the sierra princess white peaches at sam’s club are absolutely magnificent this week.

    you can also cut cherry tomatoes in half, place cut side down on parchment paper on a half sheet pan, roast/bake in a 300 degree oven until kind of sticky but not charred. cool, put in baggies and freeze. use in your winter cooking. i don’t like them in chili because they are too sweet but do like them in homemade pasta sauce.

    I’m obsessed with Guy’s Grocery Games on Food Network. I know it sounds like a stupid show, but I love it. And it gives me cooking ideas and introduces me to new things I’ve never thought of. Since I never paid any attention to it because it sounds so stupid, I haven’t seen any of the episodes and since it is a show that has been around forever, they are running marathons on the channel all the time. So I get like 20 episodes a week. And I’m so brain dead, I could have watched the episode the day before and completely forgotten it. Because like right now, it is on in the background while I would on site stuff. And by site stuff I mean Nene bots. I can’t complain about the bots though. They are great for ratings. 🙂 #EvilGenius What else can I say this week to upset Nene?

      I get into the Triple G often! You want to hate on Guy, and his response to the New York Times Food Critic a few years ago was eye rolling (when his Time Square restaurant got a bad review that was written so well it went viral).

      But his shows are good and inspiring, and while I personally tire of Diners, Drive Ins, and Dives, I LOVE that he supports such down to Earth, very local restaurants.

      Did you watch the Jodi Aries prison interview on Lifetime Saturday night? It was all about Donavan. Donavan even passed a polygraph about what Jodi told her about how and why she killed Travis. She wasn’t there to kill Travis, she was there to kill his girlfriend. It was fascinating. I can now picture how she did it. (he had picked her up over his shoulder and she was knifing him in the back). I didn’t realize Jodi’s dad committed suicide. It is worth watching.

    My landlord finally showed up today, lots not working inside and out. He cut his hand trying to unscrew a light bulb in a back patio light fixture pretty badly, the bulb exploded into his palm after slicing off part of his thumb. I have a tendency to faint at the sight of blood but strange thing is with all the covid loneliness I’ve been feeling and rightfully so paranoia I jumped into action with my first aid kit and patched him up enough he could get to the ER.

    Don’t know how many stitches he had to have.

    I order my groceries online now and pick them up at Walmart, or Target, using their drive-up services but I found out the hard way not to allow substitutes cause I got some pretty weird stuff. Cheesecake brownies showed up one time, which trust me, those two shouldn’t be a thing. Love to read some romance like someone else suggested, although I’m currently watching a show called psi, Brazilian with subtitles about a psychologist and his practice, great acting.

        I have a recipe! for a cream cheese filling that I put in banana, pumpkin or strawberry bread that you could also put in brownies. 1 large egg, 4 ounces brick-style cream cheese 1/4 cup granulated sugar and 2 tablespoons of flour. Mix all together then drop dollops on your brownie batter and swirl around with a spoon. Bake as usual. For breads I just layer half the batter then spread the cream cheese and pour on the rest of the batter.

    Hey! It has been a week for me, as T knows.

    Still at the folks, and they’ve been container gardening. We’ve had a few tomatoes and cucumbers, but the full harvest isn’t in yet.

    T – at the store get a good quality Italian dressing. Chop up the tomatoes and the cucumbers into similar sizes, marinate with the dressing, and keep chilled in the fridge. When I do this when living my myself and want to add protein, I usually throw in leftover roast chicken (that I get from Costco) or even kidney beans. Also really good with sweet onions in there for a bit of bite.

    Still doing WW, but switched to the “purple” plan so I could have potatoes and whole wheat pasta and brown rice. I feel fuller after dinner so I think it was a good thing. Down 2 lbs last week. Up this week but PMSing like cray cray, and weight myself today (not weigh in day) and the weight dropped again.

    Oh, and I found ramen made from brown rice and mullet at Costco… zero points and delish with a tiny drizzle of sesame oil and soy sauce.

    Was feeling like I could get some shit done this weekend that I’ve been putting off…woke up with a HORRIBLE case of vertigo. It is better today, but not 100 percent.

    It is in the 90s/100s here so feel you on being too hot. I did go on a walk for 30 minutes this morning before it got too bad. My back is also killing me to the point I can’t walk by the end of the day.
    I have spent much of today chasing the kid and slowly working on organizing her closet so it fits the baby clothes and her clothes in there plus all the stuff babies need. I kind of can’t wait until I can start getting rid of stuff.

    I am really just distracting myself. Had a very sad event happen yesterday and won’t get into it to keep from a downer. Trying to just push forward and keep working on the positive in life. I have also been so behind that I finally caught up with all the posts this morning. I have wanted to post but haven’t had enough time too. Thanks for being a bright spot!

        Thank you for your amazing saying as always! Family is wealth and I completely agree. I get so busy on the weekends I don’t get much time to sit and enjoy the little movements so I tend to just get cranky.

    Not exactly my garden but my in-laws have theirs on the farm behind my house. All 7 families pitch in and pick and water and weed all summer. It was very plentiful early in the summer so we have so many green beans and tomatoes. Over 100 quarts of beans canned. I started making pickles because we have cucumbers everywhere. I’ve made over 20 quarts of pickles in two weeks. I don’t want to see another cucumber! They picked 8 watermelons yesterday so every family gets one. The cantaloupes have been hit or miss. Some have been super sweet and delicious and some have been flavorless.

    That being said, I think the garden is about done after the 9 inches of rain we had here Monday night from the tropical storm. Just about everything flooded out and it had been raining so much the past two weeks, I think everything is just about water logged.

    Have you looked into watching Yellowstone? Not to add one more show to your Sunday nights but I love it! This season hasn’t been as action packed as previous ones but it’s so twisted and intertwined, it’s a good escape to somewhere I’m clueless about. And there’s cowboys. Yessssss.

      I live in Missoula Montana and read they are going to begin filming Yellowstone here. Heard it’s a good show. Not surprised because its effin beautiful here. (Not from here from Texas) Moved here last fall. The winter sucks donkey dicks though.

    I planted purple Cherokee and Paul Robisons in pots this year and have been super successful with tomatoes !!! I am giving away tomatoes and eating them like there is no tomorrow! Tomato with mozzarella and my home grown basil with balsamic reduction…I can live on that!

    We planted tomato cheaters in containers in late April/early May. Last year, the tomatoes were 6 feet high by now, but roof rats got all but 3 tomatoes. The year before, The Fiancé planted a tomato in late June in the wrong spot for sun and it gave tomatoes the next summer too. This year, the 3 heirlooms are barely 2 feet high and the two “proven” hybrids, Ace and Early Girl, are dwarfed by the marigolds in the pots that were 1/3 the size when we planted them. Oh, well…

    I can’t figure out the tomatoes. I’ve grown in pots many times. Sacramento used to be called “Sacatomato” because most of the west’s were grown here. Last year’s plants (shade for chickens) are 8 feet tall, but tomatoes are tiny and tough.

    Everything else, except one “foolproof” perennial, is kicking ass. One of the four plumerias bloomed. Things have tripled in size after barely surviving the move from hell two years ago. Five of my orchid cactus bloomed this year, for the first time since 2017. The other ones are growing at record speed. Ginger is taller than I am! Waterlillies and other water plants are thriving, despite the intervention by chickens.

    Good news: No roof rats seen in two weeks. After one killed my bird, it was “no more nice guy” mercy killing…) The landlord and The Fiancé took over eradication. I miss my little bird… ?????

    ONE MORE THING: Only 37 minutes until the Season 1 Perry Mason finale! This is NOT YOUR GRANDPA’S Perry Mason! This NEVER could have been on 1960s TV!

    I am envious of those who haven’t seen it yet. The first episode may seem slow to some people because it is very character-driven and the first episode is a lot of set up for later. Some funny moments too. I savor all of those details, some do not. But it is SO WORTH IT! I rewatched the first two episodes last weekend and saw so many little foreshadowing details I missed. The clothes are great too!

    Mathew Rhys is absolutely sublime as Perry Mason. I love executive producer Robert Downey Jr. even more for casting Rhys instead of his original plan to play the protagonist. If he had, I would have thought Downey would have been the “most perfect” as Perry Mason. But Downey, in his genius, saw Rhys as better. The ENTIRE cast is so damned good. Not since “Six Feet Under” have I marveled this much at the casting.

        The best “ending” for Perry Mason is that we get a season 2.

        The second-best … was the ENDING of the first case!

        I REALLY HOPE that the Alienist S2 does not end the way the second book ended…

        I cannot believe how F’ING HAPPY I AM RIGHT NOW!

        Good DalaiMama news, FANTASTIC Perry Mason ending and a TWO-episode Alienist finale.

        But the VERY BEST … Simba, the orange kitty I was caring for — along with five pugs — has returned! He was missing for four nights. I thought he may have crawled off and died. He was hanging out in a neighbor’s tree fort. That little monster. He loves me, so I don’t know why he stayed away for ONE night with me, and for THREE from the daughter of my client, who he was raised with and who he ADORES. Little booger.

      I almost had to quit Perry Mason DURING episode one, it wasn’t what I expected and just sort of plodded along. I binged a few episodes in the middle of the night and had to have a Recap up (there are several out there that are good and sometimes I need two at once. I have forgotten where I left off so that is problematic. I knew I should have written it down.

        I hope you go back and watch. It is so worth it. If you do, pay close attention to the “empty suitcase” scene. The faces.

        I LOVE the noir stuff and I worried other people would give up because E1 was slowish. I LOVE the slow, detailed set-ups that weave a story complex and more than surface deep. I am going to rewatch all 8 again. Next Saturday when nothing I watch is on.

        Even the music at the end was PERFECT! I nominate Matthew Rhys for Sexiest Man Alive 2020!

    Our numbers are quickly rising here, my city has the fastest growing number of new cases in the state so I’m not going anywhere any time soon. I’ve been on a healthy diet for over a month and have had a migraine that wouldn’t quit for the last two days, so tonight I made some fires and a big greasy beyond burger and it helped immensely. Now I know why these skinny, rich, white women are always so upset.

      I believe the total numbers. But some of the “rise” is due to availability of tests. Unless the actual TRACKING of new cases is separated from newly diagnosed cases, we can’t be sure of the RATE cases are rising. They ARE rising, though… I think the mistake in California was opening bars. Hair and nail salons are all shielded and they already sanitize everything. It’s sad they are on the same level as bars.

      Look at Ramona’s behavior going to parties with booze drinking … and think of Sonja loose in a bar … so many bars on the news with people packed in without masks … and what are the odds of hook ups after last call?

      Take EXTRA care of yourself by trying not to worry as much (stress hormones weaken your immune system). Wash hands, distance, mask and stay out of bars and away from drunken housewives!

        We’ve had really good testing availability here in Minnesota. Unfortunately I live in a tourist town as well as a college town, so it’s spreading rapidly.

        But I will definitely try to stay away from drunken housewives to prevent plenty of transmittable diseases! ?

    I planted peppers (jalapeno and serrano) which are yielding a lot of peppers to the point I do not know what to do with all of them. I also had basil growing which I ended up making pesto, which came out really good for the first time. I couldn’t find the blades for my food processor and had never used it before. So instead I use my bullet since I didn’t have 6 ounces of basil. My mint has grown back now that I got rid of the worms that were eating it. I am also growing garlic but it won’t be ready for a couple more months.

    On another note, I highly recommend Hostess Orange and Ice Lemon Cupcakes. Omg, they are so good!

      @Prycer – I had a deluge of pepper plants – I donated them to a charity for families who lives have been impacted by Covid plus the kids get a kick out of looking after them.

        It’s funny I cannot find the Iced Lemon Cupcakes now and I just got them a week ago. I originally found them at Walmart. I wanted to get a pack for a friend of mine. Maybe I shouldn’t have told friends about how good the cupcakes are;).

    Okay so to give you guy’s a laugh. A couple of days ago I made Lime Ricotta Waffles. They were extremely high maintenance and very time consuming. You had to separate the eggs and than fold them in, than you had ricotta, buttermilk, corn meal and etc. They took an hour to mix all the ingredients together. Once everything was done I had the batter in the waffle maker. They smelled so good and I was so excited. I put some powder sugar on them and sat down to eat. As I ate a bite I had to spit it out. Omg they were so bitter. I first thought I put too much lime zest. I took another bite to see if I could figure out what the problem was. They were extremely salty. My friend thought it might be that I let the baking soda sit to long in the buttermilk. So I looked again at the recipe, the recipe stated 3/4 teaspoon of baking soda. Loser party of one added 3/4 CUPS of baking soda. I am going to try making this recipe again tomorrow. Finger’s crossed that they come out good this time.

      LOFL. I thought you were going to say you used baking soda instead of baking POWDER. I hate those egg separated waffle recipes. (Belgian.) One day, when I am off keto, I will get the nerve to try them with the eggs mixed together.

        Why I keep picking complicated recipes is beyond me. I almost added too much baking powder and I caught that one. But I guess it was meant to be for my epic failure on the waffle making. So the whites had to be whipped until they were stiff. I was whipping them with my left hand and putting everything in my mixer with the right. I would love Belgian waffles but I just can’t anymore with these complicated recipes. I know I said I was going to attempt making them again today. Too tired, so I am now defrosting some lemon ricotta pancake batter that I made a couple of weeks ago. Yes I had a couple successful recipes.

    I have figured out how to go to the grocery store without a panic attack!

    Step one: Stay up all night. Have a few beers. Decide to go to bed around 3 am. Stay up filing legal shit until 6 or so. Consider going to bed but then stay up a few more hours while on of your favorites talks to the camera for two more hours. Make coffee. Get to the Publix VERY early in the morning when they open. Even the customers were very polite and there were not that many of them. Spend $400. Earn four times the points on your Amex for the grocery store bonus.

    Come home with enough shit to probably not leave the house except for smokes until 2021. Serious. I have all the jalepenos.

    Fresh tomatoes are just wonderful – I wish I had them. Some great Swiss cheese and quality rye bread – make a grilled cheese sandwich with some tomato slices. Or chop up tomato, basil, garlic and sauté in olive oil and use to top baked or grilled fish.

    I’ve turned into a smoothie whore which I think has changed my life? I ain’t mad at quarantine life. For whatever reason I just can’t stomach a lot of food anymore, like the thought of a giant plate of steak or a sandwich literally makes me nausea.

    So I’ve been making smoothies every morning and most nights and probably feel the best/healthiest I have ever in my life. The base is always the same (frozen berries, yogurt, banana, spinach), and then I have dozens of things I alternate (Coconut flakes, cucumbers, any fruits that are about to go bad, almond butter, flaxseed, chia seeds, antioxidant powder, etc.)

    I’ve finally learned the key to consistency is immediately filling the vitamix with soap/water and it cleans in seconds, if you let it sit you won’t be making a smoothie later – the mysteries of life).

      I’ve been drinking green smoothies every day since May and I can definitely notice a difference in my skin. I’ve never thought of using coconut flakes. What a great idea! Will have to try some tomorrow.
